There are a number of foods out there that many consider “super foods”. These powerhouse foods can give you a health boost and do so while tasting absolutely fantastic. While heaping them all together at one time may produce a steamy concoction you might find three witches cackling about, choosing wisely can produce one heck of a meal.
In today’s Meal of the Week, we are going to be combining some staples from the food world with a super food to produce a well balanced and great tasting meal, the Quinoa, Salmon and Broccoli Bowl.

Complexity: Easy
Ingredients:
- 1/3 cup quinoa
- 2/3 cup water
- Salt
- 1 scallion, thinly sliced
- 1 small head of broccoli, cut into florets
- 1 cup cherry tomatoes
- 3 cloves of garlic, chopped
- 1 tablespoon olive oil
- fresh ground pepper
- 2 6oz. salmon filets (remove skin)
Directions:
- Preheat Oven to 400F
- Rinse Quinoa with fresh water and Drain
- Add Quinoa, water, and 1/8 teaspoon salt to a saucepan and bring to a boil
- Reduce Heat to low and cover, stirring occasionally till quinoa is tender and water is evaporated (between 12 and 15 mins)
- Once done, let sit covered for 4-5 mins
- Add scallions and fluff (mix with a fork)
- Line a rimmed baking sheet with Aluminum Foil
- Toss broccoli, tomatoes, carlic, oil, salt & pepper to taste on backing sheet (toss until everything is oiled) and Roast for 10-12 mins
- Remove from oven for Salmon
- Sprinkle Salmon with Salt & Pepper and place on backing tray with vegetables
- Bake until veggies are tender and Salmon is cooked thoroughly (12-15 mins)
